EO No Bake Thin Mints




I came across this recipe from loveveggiesandyoga.com and knew I had to try it with Doterra's Peppermint Essential Oil. And I am sure glad I did! They are tasty, easy, fast and only 4 ingredients! My kids gobbled them in seconds and kept coming back for more. The recipe calls for Ritz crackers and believe me when I say that you can't even tell they are Ritz.They pretty much only provide crunch and is a great vessel for the chocolate. Please try them, you won't regret it!

EO Thin Mints

Makes about 14 cookies

14 Ritz Crackers
1/2 cup semi-sweet chocolate, melted
1 teaspoon Extra Virgin Coconut Oil
3 drops Doterra Peppermint Essential Oil



Prepare a baking sheet by lining it with parchment or wax paper, set aside. Make sure you have enough room in your fridge for the baking sheet.

In shallow glass bowl melt chocolate in microwave for 1 minute, stir and heat for another 20 seconds or until chocolate is melted and warm. Add coconut oil ( this helps chocolate stay smooth and dip-able) Add 3 drops of the peppermint*
Drop in Ritz, coat them evenly, tap them while on a fork to get an even coat, not to thick either if you want 14 cookies, and place them on the parchment. Once all the cookies have been coated, place them in the fridge for 10-15 minutes. You can store them in an air tight container in the fridge, but trust me they won't last that long.






*I used 3 drops of Peppermint oil and while it tastes pretty strong in the chocolate, once it is with the cracker, its not as strong. If you are more sensitive to Peppermint's strength, just add two drops. It is IMPORTANT that you only use 2-3 drops for this recipe, it can get insane if you add more!
Also, if you don't have Doterra Essential oil, no biggie, just use a good extract from your grocery store. In this recipe I would recommend 1/2 teaspoon.
